PACCHERI DI GRAGNANO WITH BROCCOLI CREAM | BACON AND BUFFALO STRACCIATELLA

Paccheri di gragnano with broccoli cream




INGREDIANTS


1. 500 g Paccheri (from Gragnano)

2. 300 g Broccoli


3. 150 g bacon


4. 150 g Stracciatella


5. qb Extra virgin olive oil 


6. to taste Salt


7. to taste Pepper


How to make Paccheri di gragnano with broccoli cream

1. First, prepare the broccoli cream. Boil them in abundant salted water and once cooked pass them in water and ice. Drain and blend them with an immersion blender together with extra virgin olive oil, salt and pepper, until you get a smooth and homogeneous cream.


2. In the meantime that the pasta is cooking, cut the bacon into strips and sauté it in the pan until it becomes crunchy. I recommend, do not remove the fat that will melt because it will come in handy when you skip the pasta.


3. Once the paccheri have been drained, toss them in the pan where you prepared the bacon and add the broccoli cream.


4. Serve and add the buffalo stacciatella directly on the pasta. Enjoy your meal!
