Mushroom egg turnovers recipe
Egg turnovers with mushrooms will delight young and old. To be tested urgently!
Ingredients
- 400 g Paris mushrooms
- 3 hard-boiled eggs, shelled
- 300 g of puff pastry
- 50 g of raw ham
- 75 g of fresh cream
- 100 g of cooked ham
- 25g butter
- 1 bunch of parsley
- 1 egg white
- 2 shallots
- Salt
- Pepper
Preparation of egg turnovers with mushrooms
1.Wash the mushrooms and cut them into fine pieces.
2.Melt the butter in a sauté pan then add the sliced shallots and the previously sliced raw hams. Simmer for a few minutes (2 to 3 minutes). Add the mushrooms. Season with salt and pepper then cook.
3.Incorporate the crème fraîche then mix until you obtain a good sauce.
4.Chop the parsley and add.
5.Cut your puff pastry into 12 squares. Make sure you get 10 cm on each side. Cut strips of dough.
6.Top 6 squares with the mushroom preparation.
7.Put half a hard-boiled egg on top, then beat the egg white and brush the edges of the squares.
8.Cover them with the other 6 squares and press on the edges.
9.Always brush the surface of the turnovers with egg white, then lay out strips of dough to decorate.
