This guacamole is prepared in the blink of an eye and you can easily adapt it to your baby's taste. When your little one is ready to try new flavors, add chopped cherry tomatoes (the ones that are small like marbles) or peeled and chopped cucumbers to this creamy avocado mixture. If your little one has an adventurous palate, add a pinch of cumin. When your child begins to eat food with his fingers, serve the guacamole with pieces of corn tortilla.
Servings: about 1/2 cup
Ingredients:
1 small avocado
1 teaspoon fresh coriander, finely chopped
1 tablespoon whole plain yogurt
1/4 lemon
Preparation:
Cut the avocado in half. Peel it, remove the bone and cut it into pieces. Place it on a plate or bowl and mash it with a fork, leaving the guacamole lumpier or creamier depending on your baby's age. For a very smooth and creamy puree, blend it in a blender or food processor. Add the coriander and yogurt and squeeze the lemon over this mixture. Stir and serve.
You can store the guacamole in the refrigerator for up to a day. (The guacamole will darken. To avoid this, squeeze lemon juice onto the surface without mixing it.)
